Rename the CI/CD workflow directory .mokogitea -> .mokogit (Gitea already
resolves the new path). Update all internal references to the local folder:
workflow path filters, reusable-workflow uses: paths, WORKFLOWS_DIR,
required-artifacts list, PATH header comments, the pr-check conflict-scan
exclude-dir, and the CLAUDE.md / CONTRIBUTING.md path mentions.

External references to the separate MokoConsulting/.mokogitea org repo and the
.mokogitea-private repo are intentionally left unchanged.

Closing as redundant: dev already renamed .mokogitea -> .mokogit via #160. The feature work was rebased onto current dev, so this branch is no longer needed.
