fix(ci): remove deprecated PHPStan 1.x config options

PHPStan 2.x removed checkMissingIterableValueType, checkGenericClassInNonGenericObjectType, checkAlwaysTrueCheckTypeFunctionCall, checkAlwaysTrueInstanceof, checkAlwaysTrueStrictComparison, and checkExplicitMixedMissingReturn — these are now always enabled at level 5+.
