fix(install): restore DEFAULT '' in preflight for MySQL strict mode

Joomla INSERTs extension rows without element before setting it. MySQL strict mode requires a default value. Preflight sets DEFAULT '' so the INSERT succeeds, then postflight cleans up the empty rows and stale files.
